Basmati rice is a long-grain aromatic rice originating from the India-Pakistan region, particularly the states of Himachal Pradesh and Uttarakhand. Their Sanskrit name ‘basmati’ means ‘aromatic’ or ‘pleasant smell’. This rice is valued for its delicate aroma, long, thin grain and mild flavour. Basmati rice is mostly grown in monsoon climates and can be either white or brown.
Cooked basmati rice has a slightly fluffy texture, as the grains remain separate without clumping together. They are used in dishes such as plov, biryani, pulao or as a garnish.
Basmati rice is also valued in the context of a healthy diet as it has a lower glycaemic index than conventional long grain rice.
Preparation: wash 1 part of the rice in cold water, cover with 1/2 – 2 parts of water (less water is more bulk) and bring to a slow boil. Once boiling, cover and cook on the lowest heat for about 10 -15 minutes. Remove from the heat and allow the rice to swell for 5 minutes.
