They have been valued for their aroma and healing properties since ancient times &#8211; cloves have been used in China, India and the Middle East since before our era. They became popular in Europe in the Middle Ages as a luxury spice and preservative. Cloves are used in cooking to flavour both sweet and savoury dishes, especially in baked goods, marinades, compotes or hot drinks such as tea. They are also widely used in aromatherapy and folk medicine &#8211; their essential oil has antibacterial and anti-inflammatory properties and is often used to relieve toothaches. They are used to make biscuits, desserts, sweets, ice cream, juices, compotes and cakes. They are added to pickles such as cucumbers, cabbage, carrots and beetroot.<br \/>\nAromatic, holiday-scented cloves pair well with cinnamon, bay leaves and black peppercorns, turmeric, cumin and coriander.<br \/>\nThey are also widely used in aromatherapy and folk medicine &#8211; their essential oil may have antibacterial and anti-inflammatory properties, and is often used to relieve toothaches.<\/p>\n<p><em>NOTE.
